At the heart of every great pizza is the dough, and when we launched Hellcrust, we set out to create a pizza that’s as wholesome as it is delicious. We wanted our dough to be easy on the stomach, packed with fiber, and free from the endless list of chemicals found in many commercial pizza options. To achieve this, we embraced the art of preferment dough called ' Biga'. This technique involves crafting a special dough a day or two in advance, allowing it to develop a rich, mature flavor that you simply can’t replicate in mass-produced pizzas.
